  • Salt – As per taste
  • Sea salt for sprinkling

For the Maple Barbecue Sauce

  • Barbecue Sauce – 3/4th Cup
  • Maple Syrup – 3Tbsp

Procedure

Begin with pre-heating the oven at 400° F. While the oven is getting heated you can make the fries. In a bowl mix the Garlic, Cumin and Coriander powder along with Paprika, salt and extra virgin olive oil. Now add the pieces of Yam into this mixture and mix it in such a way that all the Yam sticks get coated.

Once the Yams are evenly coated, add Parsley to it and mix well. Now arrange the Yams in a single layer on a large baking sheet and bake it for at least 30 minutes or until the edges of turn brown. You can occasionally keep stirring the potatoes. This way you will get to know if they are properly cooked through.

While Potatoes/ Yams are getting cooked you can make the sauce. For this you need to mix the Maple syrup and Barbecue sauce in a small bowl.

Once the Potatoes are thoroughly baked, sprinkle sea salt on it and serve hot with the sauce on the side.

This surely is a very simple and tasty appetizer.

As a main course, we bring you an all-time favorite:

Baked Shrimp with Chilies

You will need

  • Large Shrimp – about 20
  • Chilies – 20 (mix of medium and mildly hot)
  • Garlic Cloves – 10 (thickly sliced)
  • Oregano – 1Tsp (freshly dried)
  • Ground Black Pepper – 1Tsp
  • Lemons – 2 (halved)
  • Sea Salt – 2Tsp
  • Extra Virgin Olive Oil – ½ Cup

Procedure

First of all you need to peel the shrimp. Remove the shell and tail but leave the heads on. As usual pre-heat the Oven, preferably at 475° F or above. Place two large cast iron pans (12-14 inches each) in the oven for at least 30 minutes.

Now take the shrimp in a bowl and add chilies and garlic to it. Season it with pepper, salt and oregano. Keep the bowl at room temperature until the Oven gets heated. Once the oven and the iron pans get heated, remove the cast iron pans and place an even amount of shrimp and pepper on each on the pans. Use mittens when you are removing the iron pans from the oven. Also see to it that you have evenly spaced shrimp and chilies on the bottom of the pan. In case all the chilies do not touch the bottom of the pan, you need not worry. It’s completely fine.

Again you need to bake this for around 5 minutes or until the shrimp turns pink in color and firm in texture. A lot will depend on the size of the shrimp you use, so we advise that you adjust the cooking time accordingly.

Once the shrimp is cooked you just have to squeeze lemon over it and drizzle it with olive oil and your mouth watering dish is ready!
